Where to Eat (and Drink) Right NOw: THE MATADOR in Redmond, WA
There’s something about The Matador that keeps me coming back. Maybe it’s the bold flavors. Maybe it’s the moody ambience that feels just as fitting for a cozy date night as it does for a lively dinner with friends. Or maybe it’s simply because every dish that comes out of the kitchen is packed with personality.
I had the chance to photograph the Redmond, WA location recently, and it was a feast in every sense. From sizzling plates of fajitas and habanero enchiladas to crispy brussels sprouts and grande nachos piled high, every detail was drool-worthy.

No visit to The Matador in Redmond, WA is complete without one of their famous margaritas. The cocktail menu is a standout, offering options for every taste. Whether you want a refreshing classic or something with a fiery kick. Popular choices include:
Blackberry Habanero Margarita: a perfect balance of sweet fruit and spicy heat
Cucumber-Jalapeño Margarita: crisp, cooling, and my personal favorite for just the right amount of spice
Blood Orange Margarita: bold, citrus-forward, and refreshing
Sparkling Strawberry Sangria: light, bubbly, and perfect for brunch or girls’ night out
Tequila Flight: ideal if you want to sip, savor, and compare
When it comes to entrées, the mango-pineapple mahi mahi is a must-try. The dish strikes the perfect balance of sweet, tangy, and fresh, making it one of my personal top picks on the menu.
The Matador is also rolling out seasonal features that highlight bold Mexican flavors:
Tiger’s Milk Shrimp Tostadas (gf): Coconut milk-marinated shrimp with charbroiled corn, grilled tomatillo, and Matador house salt ($14)
Crispy Calamari: Breaded calamari with pickled jalapeños, Fresno peppers, and cilantro-Dijon aioli ($16)
Nashville Hot Chicken Tacos: Crispy fried chicken tossed in Nashville hot sauce, served with creamy Mexican slaw and garlic pickles ($16.5)
Arroz con Pollo (gf): Grilled chicken in saffron cream sauce with chile-achiote rice and roasted corn. For every order, The Matador donates $1 to St. Jude Children’s Research Hospital ($19)
